Meatballs, Tomato Sauce, Steamed Broccoli
Two things happened this weekend that were easier than they have ever been before.
1.) We rented a movie. Several movies actually. Without a 45 minute staredown between Bride Wars and Samuel Fuller. We were in and out in under 5 minutes. I mean, then we had to go back because the blu ray player wasn’t compatible with our TV. But that’s not the point.
2.) Dinner decisions were also made in less than 5 minutes. I wanted meatballs. Stu was confused, like it was a trick. Like we’d get to the grocery store and I would have a tantrum that I WANTED VEAL SCALLOPINE AND POMME LYONNAISE AND DONT YOU KNOW IM NOT EATING GLUTEN EXCEPT SOMETIMES I DO AND WHY DON’T YOU UNDERSTAND ME. But no tricks, just dinner.
Lull Your Boyfriend into a False Sense of Ease Meatballs
1 lb ground beef (grassfed has 14 times more omega 3’s. Just saying)
1/4 lb ground pork
1-2 eggs, this depends on how big your eggs are & may require some eyeballing
1/2 C italian breadcrumbs (check the ingredients though, I mean, stay away from chemical crumbs)
Healthy fistful of chopped parsley
1/2 grated onion
2 cloves of garlic, chopped
1/4 C parmesan, grated
Splash of worcestershire
Salt, pepper, red pepper flakes
- Mix together, hands work best, roll into small balls, cook on lightly oiled cast iron pan for about 10-15 minutes (depending on the size of your balls) (that’s what she said).
Tomato Sauce
Brown diced onion, garlic, chopped mushrooms. Add 2 cans diced tomatoes, add fresh basil, baby spinach, herbs (thyme, rosemary if you like), salt, pepper, chili flake. Let simmer.
Serve over whole wheat linguine, or with garlic bread, or just alone. Do whatever, this is sunday dinner.
