What do you do if you are a little hungover and oops-I-guess-you’re-not-going-to-that-yoga-class and ugh why is everything so bright today? You make a crisp. Naturally.*
If you are Vrai-lean-uh you probably consider making two or three.
There are a few different crisp options, ranging from Betty Crocker sweet to ascetically healthy.  I try to strike a balance in between the two extremes. 
Fruit
5-6 apples (peeled, cored, and sliced), 1 C raspberries, 2 stalks rhubarb (use whatever you have on hand, blueberries, peaches…), mix with juice of one lemon and a few T of brown sugar. Put into pie dish.
Topping
If you were smart enough to have the forethought to have a full bag of honey & nut granola, spread that on top liberally.  Lucky you.  If you say, already made another crisp yesterday and used all of your granola you’re going to have to make some oats.  I kind of winged this, being cheap with the butter while mixing, and then running back to check on it in the oven and adding pats where it looked dry. What can I say, I’m not at my best today.
1 C oats, 3 T flour, 1/4 C brown sugar, 1/2 roughly chopped nuts, 4 T butter (theres no getting around it), 2 t vanilla**: combine..top.
Bake at 375 bake until brown & bubbly…or about 45 minutes.
*Only after you’ve had sustenance in the form of a goat cheese, salami, spinach omelette….it’s what we had on hand. 
**If you’re not going for a citrusy/tart crisp you might want to add some cinnamon and nutmeg.
